Tandoori Rack of Lamb

Ingredients
400g (about 3/4 lb) lean rack of lamb (6 - 8 cutlets)1 small onion, chopped3 cloves garlic, minced1 tbspn indian curry powder1 tspn dried chilli flakes2 tspn ground tumeric2 tspn garam masala125 g (1/2 cup) non-fat yoghurt1/4 cup lemon juice
Directions
1. Mince onion, garlic and spices in a blender
2. Add yoghurt and lemon juice
3. Spoon mixture over rack of lamb and marinade overnight.
4. Roast lamb in moderate to high oven for approximately 30 mins, until lamb is cooked outside but pale pink in centre
Serve with vegetables.
Makes 3 serves of 2 - 3 ribs
