4 corn tortillas1 cup low-fat refried beans3/4 cup cheddar cheese, shredded1 cup lettuce, shredded1/2 cup carrots, shredded1/2 cup fresh tomato, diced
Preheat oven to 350F.
Bake tortillas on cookie sheet 10 minutes until crisp.
Remove from oven.
Top each tortilla with 1/4 cup refried beans and 1/4 cup cheese. Return to oven; bake 2-3 minutes until beans are warm and cheese melts.
Remove from oven; top with lettuce, carrots and tomatoes divided evenly among tostadas, and serve.
