Rita's Turnip Green Soup

1 T. Olive oil1 medium onion- chopped (approximately 1 cup)2 or 3 cloves garlic, minced32 oz. Chicken Stock4 C. water2 C. chopped mustard greens2 C. chopped turnip greens2 15oz.- cans Great Northern Beans1 pkg dried vegetable soup mix (I use Knorr)1 t. Tabasco1 T. Sugar1/2 t. salt (optional)1/2 t. pepper1 lb. Lean (5%) Ham, chopped1/4 C. parsley
In a large saucepan, sauté' onion and garlic in olive oil until tender (approximately 4 minutes).Add remaining ingredients except parsley. Cook for 30 minutes over medium heat, stirring occasionally. Stir in parsley, simmer for another hour or so. Serve with cornbread.
