French Onion Soup

Ingredients
4 c low sodium beef stock (broth)2 med yellow onions1 c Barefoot Merlot (or your preferred brand - can substitute any red)Oregano to tasteSalt to taste1 tbsp EVOO
Directions
Slowly caramelize sliced onion (takes about an hour) in EVOO and salt and pepper. Once completely caramelized, add 1 c Merlot and 4 c beef stock. Allow to simmer for 30 minutes. Makes four to five 1-cup servings.
