Delicious Omega-3 Flaxmeal Cookies

1 TB peanut butter, smooth1 TB honey2 TB flaxseed meal, ground fine two cookies = one serving
Note that this recipe makes 2 cookies in a toaster over, enough for one person.
Pre-heat toaster oven for 5-10 minutes at 350°F
Stir together peanut butter and honey until a smooth paste is formed. Slowly add flaxseed meal to paste until combined and a thick, sticky dough is formed.
Divide dough into two parts and form those into balls. Place both balls on toaster-oven tray and press down in the center of each with heel of hand, using wax paper to keep hand from sticking. Form into large rounds approximately 1/4 to 1/8 inch thick, or whatever size your oven tray will accommodate.
Bake for 4-8 minutes. Watch carefully. The cookies will barely brown before they are ready to be removed.
Carefully remove cookies from tray with good metal spatula. They will be very limp but once they cool they will harden up, depending on how long they were baked. Optional: sift confectioner's sugar over cookies before they cool.
Two cookies a day provides just over 200 calories and an entire adult daily dose of Omega-3 fatty acids.
