Zucchini & Feta Fritters

1 1/2 pounds medium zucchini (5 to 6)2 cloves garlic - minced1 - 1 1/2 teaspoons coarse kosher salt6 1/2 tablespoons all purpose flour1/2 teaspoon baking powder1/2 teaspoon freshly ground black pepper1/4 cup egg substitute4 oz Reduced Fat Feta Cheese - crumbled1/3 cup extra-virgin olive oil for frying
Coarsely grate zucchini into a colander, spread zucchini on a towel and roll to squeeze out liquid. In a bowl whisk together dry ingredients, mix in beer and garlic until well blended. Mix in cheese (if you have large crumbles break them up so they spread through mixture better) and zucchini and stir until zucchini is coated.
Heat enough oil to coat the bottom of your skillet over medium heat until hot, more oil can be added as needed in between batches of fritters. Drop mixture into pan, 1/4 cup at a time, flattening them into 3" rounds. Fry until browned on both sides (approx 4-5 minutes per side). Remove fritters from pan and place on paper towel to drain excess oil. Can be placed into a "warm" oven to keep fritters warm while cooking remaining fritters.
Serve hot - can sprinkle with salt if needed.
