Pizza without dough

1 medium egg plant, thinly sliced (I estimated its about 3 cups)1 cup pizza sauce1 cup reduced fat parmesan cheese1 cup part skim mozzarella cheese220 g cold cut, garlic roast beef
Prepping the egg plant:
Start by slicing the egg plant thinly. Sprinkle both sides of the slices with salt and let sit for at least 20 minutes, before rinsing off all of the salt.
Baking:
Use a non-stick cookie sheet and place the slices of washed egg plant onto the sheet. Bake at 350F for 10 minutes. While baking, mix the pizza sauce and the parmesan cheese together. Remove from oven. Spread the pizza sauce mixture over the egg plant slices. Lay the roast beef onto the slices and top with mozzarella cheese. Return to the oven for another 15-20 minutes.
