Peach Cobbler

Ingredients
2 14 1/2oz (411g) cans of Peaches or 3 cups sliced peeled peaches8 Tbls butter (no salt) (separate into 4 & 8 tbls)I x- large or jumbo egg3/4 cup low fat milk1/2 cup sugar1 1/2 cups flour (I use unbleached)1/2 tsp salt2 tsp baking powder
Directions
makes 8 1-cup servings.
Preheat oven to 375F (190C). Melt 4 tblsof the butter and pour into 8 inch square baking dish. Spread it evenly and arrange the sliced peaches over it. (If using fresh fruit sprinkle the salt/sugar mix over the fruit)
Melt the remaining 8 tbls of butter in a saucepan or microwave safe pot. Beat in the egg and milk until smooth.
Mix the flour, sugar, salt and baking powder. Stir in the milk & egg mixtureand beat until smooth. Spoon and smoth over the peaches.
Bake for about 30 minutes, or until a toothpick comes out clean. Serve from pan plain or with ice cream, half&half et...
You can substitue apples, blueberries, blackberries et..
Try a little sprinkle of cinnamon or nutmeg on the fruit prior to adding the flour mixture.
