1/2 cup egg beaters1/4 tsp. salt1/4 cup sugar1 cup unsifted flour3 Tbsp. melted butter1 1/2 cup 2 % milk
Combine egg beaters and sugar. Beat with a whisk. Add milk, beat. Add flour, beat again. Add butter and beat til batter is smooth. Bake in 8" nonstick skillet. Pour enough batter into the center of the pan to make a circle that covers about 3/4 of the bottom. Then twirl the pan around to spread the batter so it fills up the entire bottom. Cook on med/low heat til edges begin to brown. Loosen side and flip. Cook second side briefly and move to serving plate. Fill with about 1/3 cup blueberries and strawberries and 2 Tblsp, non-fat cool whip. Nutrition information is for 2 finished crepes.
