Savory Bread Pudding

Ingredients
1 loaf french bread, diced1 lb. asparagus, chopped in bite size pieces4 large eggs2 cups lowfat or skim milk2 cups chopped mushrooms1 cup swiss (or gruyere) cheese
Directions
Place bread, asparagus and mushrooms in a baking dish.
Mix eggs and milk in a bowl and pour over bread mixture.
Sprinkle with cheese and salt and pepper (to taste)
Bake 20 minutes or until top is medium golden brown. Cover with foil and bake another 10-15 minutes, or until completely set.

    I thought this was good and easy. I stirred in soy crumbles, broccoli and some chopped onion and garlic, (instead of asparagus and mushrooms) since that's what I had in the fridge. I used 1/2 loaf sliced wheat bread, 3 eggs and 1.5 cup milk and it filled an 8"x8" baking dish. - 7/19/11

    I wouldn't take my rating too seriously though. I think it was just me. I like all of the ingredients separately, and felt like putting them together didn't enhance them over just having some nice french bread or asparagus. - 4/28/11
