Garlic and Olive Oil Couscous w/Garbanzos and Tomatoes

Ingredients
1 chicken boullion cube3/4 cup water2t olive oil1t minced garlic1/2cup diced onion1/2 cup garbanzos (chickpeas)1/2 cup whole wheat couscous (dry)1/3 cup cherry tomatoes (halved)1/4 cup reduced fat feta cheese
Directions
Boil water and dissolve boullion cube in it.

Heat oil in small saucepan over medium heat. Add garlic and onion and sauté until garlic is fragrant and onion is beginning to brown and become translucent.

Add garbanzos and heat for a few more minutes. Add couscous and prepared chicken boullion. Bring back to boil, cover and remove from heat. Allow to sit for 5 minutes for couscous to absorb liquid.

Fluff couscous and stir in the cheese and tomatoes. Serve as is or season to taste with salt and pepper (not included in nutritionals).
