1 eggplant1 med onion2 stalks celery2 carrots, cut3 cloves garlic1 tsp salt1/2 tsp pepper2 Italian tomatoessmall can tomato sauce1/2 green bell pepper1/2 red pepper2 tsp olive oil3 Tbsp freshly shredded Parmesan cheese1/2 cup shredded mozzarella cheese2 Tbsp freshly cut basil1 tsp oregano
Cut up all vegetables and seasonings. Heat olive oil in skillet and add cut up vegetables and tomato sauce. Stir occasionally while mixture simmers for about 10-15 min until cooked. Place 1/4 of mixture on plate and sprinkle cheeses over. Serve with 1/2 piece Naan bread.
