Cape Cod Chopped Salad

Ingredients
8 slices thick-cut bacon8 ounces spinach greens1 Granny Smith apple, diced1/2 toasted walnut halves, coarsely chopped1/2 cup dried cranberries6 oz feta cheese crumbledfor the dressing3 tbsp apple-cider vinegar1 tsp grated orange zest2 tbsp orange juice2.5 tsp dijon mustard2 tbsp pure maple syrup Kosher salt to taste1/4 tsp black pepper2/3 cup olive oil
Directions
1. Preheat oven to 400 degrees.

2. Place a baking rack on a sheet pan and lay the bacon slices on the rack. Roast the bacon for about 20 minutes, until nicely browned. Allow to cool.

3. In a large bowl, toss together spinach, apple, walnuts, cranberries, and feta. For the dressing, whisk the vinegar, orange zest, orange juice, mustard, maple syrup, salt, and pepper in a bowl. Slowly whisk in olive oil.

4. Chope the bacon into large pieces and add to the salad. Toss the salad with dressing until just moistened. Sprinkle with salt and toss. Serve immediately.
