Anna's Bran Muffins

Ingredients

1 stick unsalted butter – room temp1 fourth of a cup light brown sugar1 egg – lightly beaten1 cup sour cream1 fourth of a cup molasses1 half of a cup of applesauce 1 to 1 and a half tsp pumpkin pie spice mix 1 half cup raisins or craisins dusted with about 1 quarter cup flour in a Ziploc 1 cup all purpose flour 1 tsp baking soda1 quarter tsp salt1 cup wheat bran (not cereal)
Preheat oven to 400 – line muffin pan
Beat butter and sugar on medium high until light and fluffy; about 3 minutes; add the egg; sour cream; molasses and apple sauce and beat on medium for approx 2 minutes
In a small bowl which dry ingredients add all at once to wet ingredients. Stir until well mixed and add raisins and flour from ziploc. Batter is thick and lumpy
Drop into muffin tins – makes 12
Bake for approx 15 – 18 minutes
I let them cool and then stick them in freezer
