Cashew Beef Stir Fry

Ingredients
2 tbsp cornstarch2 cups cold water4 tbsp soy sauce, divided1 cup broccoli, chopped2 carrots, jullienned2 tbsp olive oil, divided1 lb top sirloin steak, cut into thin strips2 cloves garlic, minced1/2 tsp pepper1/2 green pepper, cut into strips1/2 red pepper, cut into strips1 small onion, cut into strips1 cup cashews, unsalted4 cups cooked rice
Directions
Combine cornstarch, water, and 2 tbsp soy sauce; stir until smooth; set aside. Heat 1 tbsp olive oil in pan, stir fry broccoli and carrots until crisp-tender. Add in steak, garlic, 2 tbsp soy sauce, and black pepper. Stir-fry until steak no longer pink, remove. Heat 1 tbsp olive oil in pan, stir fry peppers and onion. When crisp-tender, add other veggies and steak back in. Add in cornstarch mixture and stir until sauce starts to thicken. Just before serving add cashews. Serve over rice.
