Easy Tomato Soup

1 tablespoon of olive oil1 large clove of garlic, finely chopped1 medium onion, roughly chopped1 small red chili, chopped1 400g tin of chopped tomatoes0.8 litres of waterwhole wheat pasta (optinal)
Firstly, heat the olive oil in a pan and gently fry the onion and the garlic until lightly browned.
Secondly, add the can of tomatoes to the onions and garlic and then add all the water and bring to the boil.
When boiling, simmer gently for about 40 minutes, or until the soup has required your prefered consistancy.
Blend the soup, and if using add the pasta to about 10-15 minutes. To serve divide the mixture into 3 bowls equally. Serve with or without croutons
