Crockpot Almost Picatta Chicken Mushrooms

~6 thighs, skin & bones removed~2 breasts, skinless~2 Lemons, plus additional 2/3 Tbsp lemon juice~3 tsp crushed garlic~1/4 cup apple cider vinegar~1 pkg ea brown & white sliced mushrooms~1 jar capers, (no idea on measurement, obviously if you like them capers..go caper crazy! I rinsed them since I have high blood pressure issues)~Chicken broth, 2 cups~Large diced celery &/or carrots
I use a 5qt crockpot and spray the inside with non-stick cooking spray.
~Add the chicken broth, garlic, vinegar, 6 lemon slices and the juice of the remaining lemons (plus I added 2/3 Tbsp), stir/mix, add chicken and turn over in mixture to coat & cover.
~Set crockpot to high setting for first hour, then cook for additional 4-5 hrs, depending on your crockpot.
~Add capers, mushrooms & other veggies during last hour, depending on how crisp you like them. I add mine for the last hour and the mushrooms don't get mushy, celery stays crisp.
~I always cut into a breast to make sure cooked all the way thru.
~Remove what's left of lemon slices.
