Mexican Sausage Skillet

Ingredients
Directions
1 cup uncooked long grain white rice1 1/2 cups corn (fresh or frozen)1 cup chopped onion1 lb smoked sausage2 garlic cloves2 cans diced tomatoes with green chilies1 can black beans1 tbsp lime juice
Cook rice according to package directions
Cut sausage into 1/2 inch pieces
Lightly coat skillet with non stick cooking sprat. Add Corn to skillet. Cook without stiring over medium hear 4 to 6 minutes or until carmalized on one side. Add onion, sausage and pressed garlic. Stir and Cook 3 to 4 minutes or until onion is tender.
Add tomatoes and beans bring to boil for 5 minutes
Serve over 1/2 cup of rice
