Tomatoe Lential Pie

Ingredients
1 tb. olive oil1 small onion3 garlic cloves3 Cups water1 1/4 Cup red lentils1 can tomato sauce (or 2 fresh tomatoes if in season)1/2 C salsa1 Cup Spinach1 Cup sliced mushroomstoppingcorn bread mix (jiffy size)1 cup corn3/4 cup shreadded cheesewater or 1 egg
Directions
in olive oil saute chopped onion and garlic
add lentils and cook with tomato sauce salsa and water 35-40 minutes.
while cooking mix together topping
when lentils are done convert to a casserole dish.
sprinkle topping on top (add red pepper if desired)
bake uncovered 15-20 minutes at 400 F.
