Chickpea Salad with blue cheese

Ingredients
Olive Oil, .25 cupOnions, .5 cup, choppedGarlic, 3 tsp, dicedChickpeas (garbanzo beans), 3.5 cupsParsley, .5 cup, mincedBlue Cheese, .5 cup, crumbledBlack Olives, 16 jumbo, pitted and choppedScallions, .25 cup, choppedJalapeno Peppers, 1 pepper, mincedLemon Juice, 1 oz
Directions
Heat oil in skillet over medium until it shimmers.
Add onion and garlic; cook until softened, 3-4 minutes. Remove skillet from heat and allow onion mixture to cool slightly.
Combine chickpeas, parsley, cheese, olives, scallions, jalapeno and lemon juice in a large bowl.
Stir in onion mix; toss to coat.
Makes (8) 1/2 cup servings.

    This was a very delicious salad. I cut the oil in 1/2 and the blue cheese down to 1/4 cup, and that worked really great too. I would make this again anytime because of it's nutritional benefits. Thanks for sharing.
