Manhattan Clam Chowder

Ingredients
1 lg can crushed tomatos1 can of low sodium fat free chicken broth1 cup chopped celery1 large onion chopped4 cloves of garlic, minced1 bay leaf1 tsp of Thyme1/4 cup of fresh basil, finely chopped1 cup of dice carrots2 cups of baby bok choy, chopped1 hawaiian chili pepper or thai pepper or 1/2 tsp crushed pepper flakes....to your taste1 1/2 cups of canned clam meat with juicesalt & pepper to taste
Directions
Sautee together onions, garlic, celery, and carrots until tender. Added fresh ground pepper and salt to taste. Added thyme, basil, chili pepper and bay leaf. Drain clams reserving juice. Added clams and sautee for 2 minutes. Add clam juice, tomatoes, and chicken broth, bring to a boil. Lower heat and simmer for 20-30 minutes. Add water or additional chicken broth is soup base is too thick. Should make 8 1cup servings.
