Farmers Breakfast Casserole

Ingredients
2 cups frozen hash browns1/4 cup chopped green pepper1/4 cup chopped onion6 oz ham, diced1/4 cup fat free mozzarella1/4 cup regular mozzarella1/8 cup 2% mozzarella1 cup egg beaters1-1/2 cup skim milkSalt and pepper, to taste
Directions
Place hash browns in bottom of 2-qt casserole dish. Sprinkle ham, green peppers and onions on top (mix in a little with the potatoes). Sprinkle the cheeses over all.

In a separate, small bowl, whisk together the liquid eggs and milk. Stir in the salt and pepper then pour over the ham and potato mixture in the casserole.

Bake, uncovered, at 350 degrees fahrenheit for 50 - 55 minutes. Remove from oven, let cool a few minutes, then serve.
