Crock Pot African Chicken in Peanut Sauce

Ingredients
3 lbs chicken pieces ( I always use boneless skinless parts)2 onions finely chopped4 garlic cloves1/2 red chili pepper, minced2 tsp curry powder1 tsp dried oregano leaves1 tsp salt1/2 tsp black peppercorns, cracked1/2 cup condensed chicken broth (undiluted) I didn't have it so used 99% FF swanson's1/2 cup tomato sauce1 bay leaf1/2 cup reduced fat peanut butter2 tbsp lemon juice1 red bell pepper finely chopped
Directions
Heat nonstick electric skillet over medium high, add chickn and brown on all sides. Transfer to crock pot.
Reduce heat to medium, add onions till soft, then add garlic, chili pepper, curry powder, oregano, salt and ppercorns, stirring for 1 minute. Add chicken brothe, tomato sauce and bay leaf. Bring ot a boil.
Pour over Chickn. COok on low for 6 hours or high for 3 hours until juices run clear when chicken is pierced with a fork.
In a bowl, combine peanut butter and lemon juice, add a little of the cooking juice stirring to blend. Add to slow cooker with red pepper. Cover and cook on high for 20 minutes.
Discard bay leaf.
Serve over hot white rice (not calculated in nutrition information!)
