Debbie's Griddle Cakes

Ingredients
2 tbsp butter, melted1-2 eggs1/2 c. milk1 c. all-purpose flour2 tsp baking powder2 tbsp sugarButter for frying
Directions
Melt butter. Lightly beat butter, eggs and milk until frothy. Add dry ingredients slowly, and mix just until blended (do not overmix). Batter should be slightly runny at this point.

Heat a medium-sized skillet and add some butter or cooking oil. Pour pancakes onto skillet and fry on one side until bubbles start to appear on other side. Flip over and continue cooking just until golden brown.

Serve immediately, topped with maple syrup and/or fresh strawberries. Makes 2 servings.
