Spicy Eggplant Soup

Ingredients
1.5 C green peppers1 C chopped cabbage1C chopped carrots2 eggplants chopped, 1 can of crushed tomotoes4 C water2 jalpeno pepers chopped1 tsp salt1TBS parsley2 C egg noodles
Directions
add all but the eggnoodles to a soup pot and bring to boil. I cook noodles on the side and add to my individual servings as I do not like soggy noodles Can add meat if desired. Makes 12-15 1Cup servings
