Cinnamon Zucchini Mini Muffins

Ingredients
3 Large Eggs3/4 C Granulated Sugar3/4 C Brown Sugar1 Tbsp Vanilla1/2 C Canola Oil1/2 C Unsweetened Applesauce1 tsp Baking Powder1 tsp Baking Soda, 1 tsp1 tsp Sea Salt2 C White Flour1 C Whole Wheat Flour1 Tbsp Ground Cinnamon4 C Shredded Zucchini
Directions
Combine dry ingredients. In a separate bowl, beat eggs, oil, applesauce, vanilla, and sugars until well combined. Combine dry and wet ingredients. Stir in zucchini. Spoon into lined mini muffin pan. Bake for 10 min in a preheated 350 degree oven. Makes 72 mini muffins.
