3/4 lbs ground turkey1 cup chopped green bell pepper1 cup chopped red bell pepper1/2 cup chopped onion32 oz. can of tomato juice2 tbsp chili powder2 tsp garlic powder4 cups white rice or brown
Brown ground turkey in a large stock pot and add in green and red peppers and onions and cook until tender. Add tomato juice, chili powder, garlic powder and salt (to taste) and bring to boil. Add rice and cover while reducing heat to simmer. Let simmer for 20 minutes or until rice is cooked. If the sauce is too thick, add a cup of water. This makes 10-12 servings and is good served on flour tortillas...maybe even with a little cheese!
