Introduction

Ingredients

    Lean Ground Turkey
    Bundle of Fresh Collard Greens (your wrap material)
    Salsa
    Taco Meat Seasoning
    Low-Fat Grated Cheddar or Monterey Jack
    Fat-free Refried Beans
    Yogurt (substitute for sour cream)
    Onion

Directions

Dice up your onion and sautee with a little spray of Pam non-stick spray. Add Ground Turkey, brown well. Drain off excess fat.
Add taco seasoning as per the package directions, (while reserving a teaspoon for your yogurt sauce) adding water if necessary.

Take your Collards (between 4-8 depending on size) and select the biggest leaves, gently pull off the little protruding stem being careful not to rip the leaf itself.

Place your Collards in the microwave on a plate and cook on high for 1 minute. Remove and set aside.

Put your refried beans in the micro for 2 minutes on high. While they are cooking take your fat-free plain yogurt and mix in the remainder of the taco seasoning.

Lay each individual collard and layer with the refried beans, seasoned turkey, grated cheese, seasoned yogurt sauce and finally salsa.

Neatly wrap and serve! Yummy :)
