    2 Chicken Breasts- no skin
    1 Cup Corn and Black Bean Salsa
    2 Packages of Spanish Rice
    1 Cup Cheddar Cheese- Shredded
    Sour Cream- optional
    Tortilla Chips- Optional


Preheat oven to 425.
Cut up chicken in to cubes and cook in a frying pan with a little bit of olive oil and water.
While cooking chicken, also prepare the rice in a saucepan.
When rice and chicken are done combine Rice, Chicken, and Salsa in a cassarole dish.
Put in the oven uncovered for 30 minutes. Take out of the oven and put the cheese on the top and place back in the oven for an additional 10 min, or until cheese is melted.
Serve with Sour Cream and Tortilla Chips
