Chicken Fried Rice

Ingredients
8 c cooked brown rice1 large onion, chopped2 garlic cloves, minced8 oz boneless, skinless chicken breast, cut in small pieces2 c frozen peas and carrots8 oz package mushrooms, chopped1 T canola oil2 T soy sauce2 large eggs
Directions
Heat oil in large saute pan. Add chicken and cook until white all over. Add onions and mushrooms, saute a few minutes until med tender. Meanwhile put peas and carrots in a bowl with a tablespoon or two of water and cook 3 minutes. Drain and add to saute pan along with garlic. Cook until veggies are tender and chicken thorougly cooked. Add cooked rice and salt and pepper to taste. Add soy sauce, adding more to taste, if necessary. In another pan scramble eggs and add to rice mixture. Serve hot!
