Living Lean Chicken Curry

40 ounces Chicken Breast, skin and bone removed3 Tbsp Olive Oil6 Tbsp Curry Powder2 cups of diced onions3 cloves of garlic, chopped3 cups of coconut milk3 cups of diced tomatoes1 cup of tomato sauce9 tsp of splenda sugar
Season chicken with Mrs Dash.
Heat Oil and curry powder in large skillet over medium high heat for 2 mins. Stir in onions and garlic, and cook 1 min more. Add Chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 mins, or until chicken is no longer pink in center and juices run clear.
Pour coconut milk, tomatoes, tomato sauce and sugar into pan, and stir to combine. Cover and simmer, stirring occasionally, approx 40 mins
