Sweet Lentil-Pumpkin Pudding

Ingredients
1/4 cup raw red lentils2/3 cup vanilla rice milk1/4 tsp cinnamon1/2 tsp fresh grated ginger1/2 tsp grated orange zest1 cup well-cooked brown short-grain rice1 large, over-ripe banana, broken into chunks1 tsp brown sugar1/3 cup pure pumpkin puree
Directions
Combine lentils, milk, cinnamon, ginger and orange zest in a saucepan over medium heat and bring to a simmer.
Cook, stirring occasionally, for 15 minutes.
Stir in rice and cook a further 10 minutes.
Remove from heat and transfer to a blender.
Add banana, brown sugar and pumpkin puree and process until very smooth.
