Extra Lean Meat Ragout

Ingredients
1 tbsp. extra virgin oil2 slices bacon1 onion chopped2 cloves garlic finely chopped1 carrot diced finely1 rib celery diced finely1 lb. extra lean hamburger1 cup dry red wine1 28 oz. tin of plum tomatoes pureed w/juices2 tbsp fresh parslet choppedsalt & pepper to taste
Directions
Heat deep skillet and fry crumbed beacon until crisp. Discard any fat.
Remove beacon add 1 tsp extra virgin olive oil, carrots and celery and cook gently for 5 minutes until tender.
Increase heat and add ground beef and breaking it up until brown.
Add wine and cook until reduced by half.
Add tomotoes, reduce heat and cook uncovered for 30 mins.
Stir in parsley, taste and adjust seasonings as desired.
