Apple Quick Bread

Ingredients
2 C. White Whole Wheat Flour1 C. All Purpose Flour1 t. Cinnamon1 t. Baking Soda1/2 t. Baking Powder1/2 t. Salt1/2 C. apple sauce2 eggs1 C. Brown Sugar1/2. C. white sugar 1 t. vanilla extract3 C. apples peeled cored and chopped
Directions
Whisk together first 6 dry ingredients in large mixing bowl.
In another bowl, mix together remaining ingredients. Add wet ingredients to dry and mix gently. Batter will be thick.

Divide between 2 loaf pans. Bake at 350 for 30 minutes or until bread springs back slightly to touch.

    I wanted a recipe to make for my neighbors for Christmas. This was perfect! I used 3 8x4 pans instead of 2 9x5. Worked very well. They still needed 30 minutes of baking time, though, so I wonder if the bigger pans may need longer.

    I am always looking for apple recipes this time of year. This one is excellent. The onlt changes I made were to use whole wheat flour and add a little nutmeg. I recommend this one for sure! - 9/28/10
