Zucchini Cornbread Casserole

Ingredients
4 cups shredded zucchini1 med. onion chopped2 eggs1 pckge corn bread mix (Jiffy)2 cups 2%fat Shreeded Cheddar cheesesalt and peppar to taste
Directions
Preheat oven to 350 degrees. Shred zucchini and chop onion. Place in large bowl. Add 2 eggs, salt and peppar, and cornbread mix. Mix in 1/2 of the cheddar cheese. Pour into greased rectangular casserole dish. Top with the remaining cheese. Bake for 60 minutes.
