Tomatoes Stuffed with Hawaiian Chicken Salad

4 Large Tomatoes1 1/4 lb chicken breat1 1/5 cup diced pinapple3/4 cup chopped baby spinach 1/2 cup olive oil1 1/2 TB Dijon Mustard2 TB Red Wine Vinegar2 tsp drive thymeSalt and pepper
Slice top 1/2 inch from each tomato and scoop out pulp. Drain tomatoes upside down on paper towels while you make stuffing.
Cook chicken for 20 minutes at 400 degrees. Dice.
In Medium bowl combine chicken, pineapple and chopped spinach. In a small bowl make the dressing. Whisk together oil, mustard, vinegar and thyme. Season with salt and pepper. Pour dressing over chicken mixture.
Fill each tomato with appx 1 1/3 cups of chicken mixture
