Beet Bliss Salad

Ingredients
Salad:8 Beets, fresh (2" dia) 20 Pecans halves, chopped. 2 oz Feta CheeseDressing:4 tbsp Olive Oil2 tbsp Maple Syrup2 tbsp balsamic vinegar1 tbsp Mustard- Stone ground1 tbsp Soy SauceSalt & Pepper to taste
Directions
Clean beets and wrap in foil. Roast in 375 F oven for one hour. Let cool and chop into bite-size pieces. Add pecans and cheese, mix.

Combine dressing ingredients in jar and shake well. Pour over chopped beets, serve.
