ABDubs Roasted Mixed Summer Veggies

Ingredients
Balsamic Vinegar, 10 tbsp Summer Squash, 1 medium Zucchini, baby, 1 large Eggplant, 1 cup (1" cubes) Shallots, 4 tbsp chopped Red Peppers (bell peppers), 1 cup, chopped tsp)Mushrooms, fresh, 1 cup, pieces or slicesBalsamic Vinegar, 10 tbsp
Directions
Preheat oven to 400 degrees F. Line a 13X9 baking pan with tin foil and spray w/ nonstick cooking spray. Cut all vegetables into even sized pieces and combine in a bowl with balsamic vinegar. Stir til fully coated and pour into the pan. Place on center rack and bake for 40-45 minutes (or until veggies are just tender). Sprinkle with salt and pepper and serve.
