Low Calorie Chicken Fried Rice

2 sprays cooking spray2 large egg whites1/4 cup scallions, chopped2 medium garlic cloves, minced2 cups chicken broth (99% Fat Free)2 cubes chicken bouillon1/4 cup carrots, diced1 cup long grain white rice (may use instant by following instructions on package; keep hot)1/4 cup frozen green peas, thawed
In medium pan, add bouillon to chicken stock and boil. Add rice and simmer until cooked (approx 20 minutes).
Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes; remove from pan and set aside.
Off heat, recoat skillet with cooking spray and place back over medium-high heat. Add scallions and garlic; saute 2 minutes. Add carrots; saute until cooked through, about 5 minutes.
Stir in reserved cooked egg whites, cooked brown rice, peas and soy sauce (to taste); cook until heated through, stirring once or twice, about 1 minute.

This recipe got the best compliment of all... my teenage daughter told her teenage brother who had opted for PB&J, "No, you should eat this. Seriously. It doesn't taste like SHE made it." And then, they both happily ate up! I loved it too--it's probably the best thing I ever made. :) - 2/8/10
