Yummy Smashed Cauliflower

Ingredients
1 medium head of raw cauliflower1 tablespoons of onion soup mix3 tablespoons of fat free cream cheesesalt and pepper to taste
Directions
Break the cauliflower into chunks
Steam or boil the cauliflower until it is soft but not mushy
Drain cauliflower really well
Add soup mix and cream cheese
Mash ingredients together (In food processor or by hand)
Add salt and pepper to taste

Sometimes I add a sprinkle of paprika to make the dish look more colorful, or I put it under the broiler for a couple of minutes to get a little color on top.
