I've made variations on this recipe. For the salad greens, any greens will do (lettuce, beet or turnip greens, cabbage, etc.). Just chop them finely (bruising in the process), try to drain water so the burgers aren't too moist. "lots" of greens here means, work with at least several cups. - 8/26/07
