Low Fat Apple Snack Cake

Ingredients
1 cup all purpose flour1 cup sugar2 teaspoons baking powder1 egg 3/4 cup nonfat vanilla yogurt1 teaspoon vanilla extract3 cups chopped peeled tart apples1/2 cup walnuts or pecans
Directions
Combine flour, sugar, baking powder, and cinnamon in large bowl. Stir in egg, yogurt, and vanilla extract. Mix well. Fold in apples and walnuts. Spread in 9" square pan coated with nonstick spray. Sprinkle top with a bit of sugar and cinnamon. Bake at 350 for 30-35 minutes. Makes 9 servings.
