Spicy Roasted Garlic Spinach Pesto Pasta

Ingredients
15 garlic cloves1 pound cherry tomatoes1/4 cup parm cheese1 cup fresh baby spinach1 pound linguine1/2 tsp red pepper flakesOlive oil spray4 tbsp EVOO
Directions
Spray tomatoes with olive oil spray, place garlic cloves and EVOO in small baking dish.
Place in preheated 375 degree oven, bake for 25-30 min.
Drain garlic and reserve oil.
In food processor place garlic, tomatoes and spinach and enough reserved olive oil to bring the pesto together.
Cook pasta according to pkg directions and drain.
In large bowl combine pasta and pesto.
Can be prepared with chicken tenders or shrimp. (not included in values)

Makes (8) 2 oz servings of pasta.
