Sourdough Leek Strata

Ingredients
3 thick slices french bread, cubed2 leeks (white part only), sliced1/2 red bell pepper, diced1 clove garlic, minced3/4 cup shredded cheddarsalt and pepper to taste1 Tbsp olive oil4 large eggs1 cup 1% milk
Directions
Whisk together eggs and milk, set aside.

In baking dish, mix all other ingredients well. Pour egg/milk mixture over the top, let sit in refrigerator for at least 2 hours or up to overnight.

Bake, uncovered, in a 350 F oven for 40-45 minutes or until set. Let stand 5-10 minutes before cutting and serving.
