Cauliflower Gratin

Ingredients

1 medium cauliflower or 5 cups of florets2 tsp olive oil3/4 cup chopped onion2 cloves garlic (2 tsp minced)1 14.5 can low sodium chopped tomatoes2 tbsp drained capers1/2 cup feta cheese crumbled1.5 tbs dill, fresh
Makes 4 large servings or 6 for side dish
1) steam cauliflower 4-6 minutes until tender (don't over cook)
2) Heat oil in sauce pan, over low heat saute onions & garlic (5 mins)
3) add tomatoes with juice & capers to onions - cook 7 mins
4) spread half of tomato mixture in 2 qt gratin dish, add cauliflower, pour remaining tomato mixture on top of cauliflower
5) sprinkle with feta & dill
6) Broil 5-6 mins until feta is bubbly
