Chicken with asparagus and roasted peppers

Ingredients
Ingredients:Chicken Broth, 4 fl oz (remove)Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook (remove)Asparagus, fresh, 1 cup (remove)*Peppers, sweet, red, fresh, 1 cup, chopped (remove)Garlic, 1 clove (remove)Red Ripe Tomatoes, .5 cup, chopped or sliced (remove)balsamic vinegar, 2 tablespoon (remove)Mozzarella Cheese, part skim milk, 4 oz (remove)Onions, raw, .5 cup, chopped (remove)
Directions
makes 4 servings
brown chicken in large skillet w/ chopped onion
once browned, add broth and cook (aprox 15 mins) until chicken is almost cooked through
add asparagus and red peppers and garlic
continue cooking 10 minutes until chicken is done and asparagus is tender
place tomatoes in skillet during last 2 minutes of cooking
sprinkle with vinegar, top with mozzarella cheese and serve
