Ingredients
1 medium head of cabbage, shredded1/2 cup green pepper, chopped1 plum tomato, chopped3 tsp. urad dhal1 tsp. oil1 tsp. mustard seed1/2 tsp. cumin seed6-7 curry leaves1 tsp. salt2 tsp. coconut, grated1 tbsp. cilantro, chopped
Directions
Add oil to a non-stick pan on med. heat. Add mustard seed and cover. Let the seeds pop. Then add the cumin, hing, curry leaves, and urad dhal. Roast for a minute, then add cabbage and green peppers. Mix well, then cook covered for about 5 minutes. Then add tomato and about 1/4 c. water and salt. Cook for another 5 minutes. Turn off heat and add coconut and cilantro. Serve hot. Makes 3 servings.
