Raw Almond Joy Bars

*~*Filling*~*~1 1/3 cup of Unsweetened Raw Dried Coconut1 lrg. Young Coconut (meat only)1/3 cup of Raw Agave Nectar I used the blue kind.1 Vanilla Bean ( paste only)2Tb of Raw Coconut Butter*~*Chocolate Syrup*~*4Tb of Raw Cacao6Tb of Raw Agave1tsp. of CinnamonSplash of Young coconut Juice until desired consistency
Filling Ingredients I blended all ingredients in a Food Processor once consistency is sticky to form.
Let it sit in the Fridge for like 20 minutes or so and form into 3/4 inch square rounds Like an Almond Joy. Top with 1 almond and let sit while you make chocolate Sauce.
Whisk Chocolate Syrup Ingredients: Cacao, Agave, Coconut Butter,Cinnamon and 1tsp. of Coconut Juice. Add more Coconut Juice to get desired consistency.
I liked it medium to light consistency so I can pour over Coconut squares. I had to adjust it by adding juice.
I added a bit of Syrup on the bottom of a sheet of wax paper then I poured it over the squares to cover it with the syrup.
this process takes time, but make sure the coconut is covered completely then let sit for a few hours in the fridge.
Yumm they taste so much like Almond Joy just not as sweet and they are so delicious.
An fyi because it is raw the chocolate will not harden and lift off of the wax paper as good but it is very good.

thank you.for the chocolate cobvering,i having been looking for a chocolate receipe so long that is not made from melted down brought chocolate and covertures so my son can eat them you donīt know how much you have just made my life easier at school fest.my son can now eat cholate with the rest. - 2/19/11

That's great I'm happy for you I have found other recipes where they've used raw coconut oil instead of Agave you might want to try that too. I think I need to bump up the ingredients for the chocolate covering though I didn't have enough.
