Ingredients
Directions
12 Whole Cloves of Garlic4 Chicken Breasts1 cup chicken broth (or just enough to cover the chicken)1 Red Bell Pepper, sliced into strips1 medium onion (I prefer vidalias), sliced2 tsp Garam Masala seasoning (or more, to taste)
Slice the onion and bell pepper into strips. Saute the onion, bell pepper, and garlic cloves in olive oil until the onions are just transparent (I just do this in the crock-pot to conserve pans). Put vegetables and chicken in crock pot and add enough chicken broth to cover the chicken, add Garam Masala seasoning and stir well.
Cook in crockpot on low for 8-10 hours or on high for 4-6.
The slow-cooking makes the garlic sweet and very, very mild (so mild that I've quite often used much more than just the 12 cloves) and the broth and vegetables make a tasty, but thin sauce. This is best served over basmati rice or couscous.
Serving size is one chicken breast with sauce.
