Summer's Garden Bounty

Ingredients
1 medium onion, diced1 large clove garlic, minced 1 1/2 lb.. yellow (or, zucchini) squash , shredded 2 large (or 3 medium) ripe tomatoes, diced 1 1/2 tsp. Italian seasoningPinch sea salt dash fresh ground pepper Parmesan cheese to taste (about 4 Tbsp.)
Directions
In a large 2 to 2 1/2 quart pan, saute onion and garlic until tranluscent.
Add remaining ingredients, except cheese. Heat over medium heat until squash is tender. Stir in cheese. Add more seasoning if desired. Yields 8 servings.

NOTE: Shredding is a great wau to use "over-sized summer squash. Just peal, seed and shred. (You can also freeze the shredded squash for later use in a variety of recipes including cakes and brads.)
